3 cups hot cooked soybeans
3/4 cup oil
1/3 cup vinegar
Salt and pepper to taste
2 cloves garlic, finely chopped
1/2 cup chopped scallions or chives
1/2 cup chopped green or red pepper
1/3 cup chopped celery
2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh dill
Place hot beans in a bowl. Combine oil, vinegar, salt, pepper and garlic, and then pour over hot beans. Cover and marinate in the refrigerator several hours.
Stir in scallions, pepper, celery, parsley and dill. Chill again.
Serves 4-6.
