Tangy Cauliflower

Cauliflower with chopped bell peppers and tangy dressing ingredients.

Ingredients:

  • 1 medium cauliflower, broken into flowerets
  • 3 tablespoons red wine vinegar
  • 2 tablespoons melted butter
  • 2 tablespoons chopped red bell pepper (or use roasted red pepper)
  • 2 tablespoons chopped green bell pepper
  • 1 teaspoon sugar
  • 1/4 teaspoon salt

Preparation:

Steam cauliflower or cook in a small amount of boiling salted water for about 8 to 10 minutes, until crisp-tender. Drain cauliflower. In a small saucepan, combine vinegar, melted butter, red and green peppers, sugar, and salt. Cook over low heat for 5 to 7 minutes; pour over hot cauliflower. Cauliflower recipe serves 4 to 6.

Broccoli and Cauliflower Casserole

Broccoli and cauliflower casserole recipe with a creamy white sauce and Parmesan cheese.

Ingredients:

  • 2 cups water
  • 1/2 teaspoon salt
  • 1 1/2 to 2 pounds of broccoli and cauliflower pieces
  • milk
  • 4 to 5 tablespoons butter
  • 4 tablespoons flour
  • salt and pepper to taste
  • dash nutmeg, optional
  • 2 tablespoons fine dry bread crumbs
  • 1 to 2 tablespoons grated Parmesan cheese
  • 1/8 teaspoon paprika

Preparation:

In a large saucepan, bring water and salt to a boil. Add broccoli and cauliflower; cook just until crisp-tender. Drain cauliflower, reserving liquid. Add milk to the vegetable liquid to measure 2 1/2 cups.

Turn vegetables into a shallow 2-quart baking dish. Melt 3 tablespoons of butter in the saucepan over medium heat. Blend in the flour, stirring until smooth and bubbly. Gradually stir in milk mixture. Cook, stirring constantly, until thickened and smooth. Season with the salt, pepper, and nutmeg. Pour sauce over broccoli and cauliflower. Dot with remaining 1 to 2 tablespoons of butter. Combine bread crumbs, Parmesan cheese, and paprika; sprinkle over vegetables. Bake at 450° for about 20 minutes, until casserole is bubbly.
Serves 4.

Cauliflower Casserole

Green onions and red bell pepper make this a festive choice for any holiday meal or family dinner. I use the food processor to make the bread crumbs with day-old bread or croissants, then I keep the crumbs in the freezer for casserole toppings, meatloaf, or meatballs.

Yield: Serves 4 to 6

Ingredients:

  • 1 medium head cauliflower, separated into small flowerets
  • 6 tablespoons butter, divided
  • 1/2 red bell pepper, finely chopped
  • 4 green onions, thinly sliced
  • 1 tablespoon chopped parsley
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt, or to taste
  • 1/8 teaspoon ground black pepper
  • 1 1/2 cups milk
  • 1 1/2 cups shredded sharp Cheddar cheese, divided
  • 1 cup soft bread crumbs

Preparation:

Heat oven to 350°. Butter a 2-quart baking dish.
Steam the cauliflower until just tender, about 7 minutes. Set aside. In a medium saucepan, melt 4 tablespoons of butter over medium-low heat. Add the red bell pepper and cook, stirring, until just tender, about 2 minutes. Add the green onion and chopped parsley and continue cooking for about 2 minutes longer. Add the flour and stir until blended. Stir in the milk and cook, stirring until thickened. Add 1 cup of the cheese and salt and pepper, to taste. Cook, stirring, until cheese is melted. Combine with the cauliflower and spoon into the prepared baking dish. Top with the remaining cheese.
Melt the remaining 2 tablespoons of butter and toss with the bread crumbs until crumbs are thoroughly coated. Sprinkle evenly over the casserole.
Bake for about 25 to 30 minutes, until topping is nicely browned.
Serves 4 to 6.

Ingredients:

  • 1 small to medium head cauliflower, cut into florets, about 6 cups cauliflower florets
  • 2 teaspoons crushed garlic
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup fresh grated Parmesan cheese

Preparation:

Line a large baking pan with foil; spray lightly with cooking spray. Heat oven to 425°.

In a large bowl or food storage bag toss the cauliflower florets with the olive oil, garlic, seasonings, and Parmesan cheese.

Spread the cauliflower out on the prepared baking pan.

Roast for 25 to 30 minutes, turning every 10 minutes, or until tender and lightly browned.

Currant, Lamb And Celery Salad Recipe

Proportions of ingredients to taste:
Currants, washed, picked
Lamb, cold roast or boiled, cut in small strips
Celery, washed, cut in small strips
Lettuce
Mayonnaise dressing .

(To make mayonnaise sauce or dressing: Mix 1 teaspoon of pepper, 2 teaspoons of mustard and 1 teaspoon of salt with 2 yolks of egg. Add½ tablespoon of vinegar. Add 1.5 cups of olive oil gradually, stirring constantly. As soon as the mixture thickens, thin it with a little more vinegar. Proceed until two tablespoons of vinegar, and all the 1.5 cups of oil are used. If the oil is added too rapidly, mayonnaise will curdle. Smoothness can be restored by taking the yolk of another egg and adding to it little by little. The curdled mixture. Mayonnaise should be stiff enough to hold its shape.)
Instructions
Lamb And Celery Salad Recipe, On each plate place some leaves of lettuce.
Mix currants, lamb, celery and mayonnaise.
Arrange in center of lettuce leaves.

Creamed Celery On Toast Recipe

3 cups cut celery
1 cup milk
1 tablespoon butter
1 tablespoon flour
½ teaspoon salt

Instructions
Clean, scrape and cut enough celery to make three cups.
Cook until tender in boiling, salted water, which will require about forty-five minutes.
Let the water boil away when done, leaving the celery with very little liquid.
Prepare a thin white sauce of the remaining ingredients, and pour over the celery.
Prepare the toast by trimming the crust from thin slices of bread.
Cut diagonally, making triangular-shaped pieces of toast.
Toast in a moderate oven until crisp.
Dip slices of crisp toast into some hot milk or cream.
Serve with a spoonful of the creamed celery upon each slice.

8 stalks celery
2 cups boiling water
Salt, pepper
1 tablespoon butter
1 tablespoon flour
3 cups milk

Instructions
Wash and scrape the celery and cut it into small pieces. Add the water and cook until very tender.
Renew the water if it boils away.
Mash the celery in the water in which it was cooked.
Scald the milk.
Melt the butter in a saucepan, add the flour, and pour in slowly the scalded milk.
Cook thoroughly, stirring constantly.
Mix this sauce with the celery, season to taste; strain, and serve immediately with croutons

Almond And Celery Soup Recipe

1 bunch of celery, using the leaves and root after it is carefully scraped
6 peppercorns
2 bay leaves
1 tablespoon of onion juice
1 thin slice of lemon
1 teaspoon of salt
Stick of cinnamon
1 quart of water
1 cup of cream
1 teaspoon each of flour and butter blended together
1/4 cup of blanched almonds, pounded to a paste
Instructions
Cut celery in small pieces.
Add peppercorns, bay leaves, onion juice, lemon, salt, and cinnamon.
Cover with the water and cook one hour.
Strain and again reheat, stirring in the cream, flour and butter mixture, and blanched almonds.
Boil for a moment or two after the nuts are added.
Serve very hot with cheese crackers.
