Garlic - Raw Garlic Recipes and Health Benefits

 By

The health benefits of garlic are well documented. Millions of people eat garlic, however, most people only eat it cooked. Fewer people actually eat raw garlic, yet eating garlic raw is the way to maximise garlic's health benefits. Taking garlic supplements does not have the same potency as eating raw garlic recipes.
Garlic, of course, is rich in protein, vitamins A, B and C, and essential minerals, including iron, calcium and selenium. Garlic's medicinal role in treating illness has been described in over 1000 scientific studies, and modern research into the health benefits of garlic have shown it to be beneficial in a wide variety of conditions, including high blood pressure, the common cold, cancer, as well as bacterial and fungal infections.
The ingredient in garlic which is responsible for its healing properties is called allicin. However, it is only when garlic sustains damage that allicin is released and becomes active. So when raw garlic is cut, crushed or bruised, allicin is released. Just as with other nutrients, though, allicin is destroyed by heat and unfortunately, it breaks down quickly once released. Therefore, to get all the garlic health benefits, it is best eaten raw and immediately after being prepared.
Raw garlic recipes are easy. For many years I cooked with garlic until I realised I was missing out on its health benefits. So, I began adding garlic right at the end of the cooking process. For example, I would crush garlic onto my soup or a stir-fry after it was ladled into my bowl. Similarly, I would crush raw garlic onto buttered toast before I added my gently fried egg, fried in coconut oil, of course. Raw tomatoes on toast with rock salt, fresh basil and crushed raw garlic is delicious, much like a bruschetta. Moreover, I would make such raw garlic recipes and feed them to my kids at the first signs of a sore throat, and their sore throat would always disappear. You don't need much. Start with just a quarter of a clove crushed and build it up as you become accustomed to the taste. You can still cook with garlic for flavour. But for its health benefits, add raw garlic to your dishes.
I have advised many patients to try the simple raw garlic recipes when they have tried many other things, including antibiotics, to knock their respiratory infections on the head. The amazement of people when they experience the positive effects of eating raw garlic when suffering from such infections has led to many a convert. Their concerns over garlic breath paled into insignificance when measured against the health benefits. Besides, there are many easy and cheap ways to mask garlic breath, including eating fresh parsley and other fresh herbs, such as peppermint, spearmint, cardamom seeds and coriander leaves. You can also suck a lemon wedge sprinkled with salt. Alternatively there are flavoured mints, chewing gums, mouth washes and drinking green tea.
So go ahead! Kill off those cold and flu bugs and get the maximum garlic health benefits by eating it raw. Start today. Making raw garlic recipes is easy. No recipe books are required. Just crush it onto your lunch or dinner for optimum good health. Enjoy!

An Easy Dinner Recipe - Broiled Garlic Ginger Pork Tenderloin with Broiled Vegetables

 By

This easy dinner recipe is also an easy clean up. You need only a broiling pan and a cutting board to make the complete meal. The menu features broiled pork tenderloin and broiled vegetables. Add a nice slice of bread to round out the meal. The vegetables are broiled right alongside the meat for a quick, easy dinner recipe that is sure to please.
Garlic Ginger Pork Tenderloin Dinner
3/4 pound pork tenderloin
1 Tablespoon garlic, minced
1 Tablespoon fresh ginger root, minced
seasoned salt
1 large onion, sliced thin
2 small yellow squash or zucchini squash
2 medium size tomatoes
1-2 Tablespoons olive oil
Few drops balsamic vinegar (optional)
kosher salt
  1. Preheat the broiler
  2. Combine the ginger and garlic. Pierce the tenderloin all over the surface forming little pockets. Rub the ginger and garlic mixture into these pockets. Season the outside well with seasoning salt.
  3. Place onto a broiler pan. Slice the onions, squash and tomatoes for broiling. Slice the squash in half lengthwise and the tomatoes crosswise. Slice the onion into slices and place on the broiler pan, cut side up, around the pork tenderloin.
  4. Brush the onions, squash and tomatoes with oil, then sprinkle with kosher salt. Optional: sprinkle the tomatoes with a little balsamic vinegar.
  5. Broil 4 - 6 inches from the heat for 8 minutes.
  6. Turn the pork tenderloin over. Broil for another 6 minutes.
  7. When the pork is done, transfer to a cutting board and let rest for 5 minutes.
  8. Cut the pork into thin slices and arrange on dinner plates with the onion, squash and tomato. Enjoy!
You can roast any other vegetables you desire with this easy dinner recipe as well. Use sliced peppers, leftover boiled or baked potatoes or sweet potatoes. This easy dinner recipe for pork tenderloin prepared is very with garlic and ginger, but it is delicious! It is worth the effort to make the pockets for the ginger and garlic. The spiciness penetrates the meat. If you don't want to be bothered making the pockets, then coat the meat with the spices on the outside. I prefer Lawry's Seasoned Salt for coating the outside, give it a good sprinkle. The salty spiciness makes this dish.
You can prepare a pork loin this way as well, but it will need to cook much longer. Usually, when preparing a loin, I prepare it this way, then put it on the grill for about 30 - 45 minutes or until done.
I hope you enjoy this easy dinner recipe and that it will inspire you to try broiling other vegetables and meats for an easy and quick meal.

Home Cooking: Favorite Recipe for Chinese Szechuan Ginger Chicken

 By

Every chef has a few favorite recipes that are not part of his or her specialty. I'm an Atlantic Coast chef who naturally uses seafood and local ingredients in his recipes, and love doing it.
But when I whip up something just for the fun of it for family and friends -- here's a personal favorite from China's largest province, Szechuan.
Szechuan is the homeland of a number of spicy recipes, such as "Tea Smoked Duck" - a delicious dish made by smoking a duck over tea leaves.
Much of the spicing of Szechuan cooking is done by bringing together five fundamental taste sensations - sweet, sour, pungent, salty and bitter. The balance of these distinct elements in any one dish or regional cuisine can vary, according to need and desire. Szechuan cooking uses lots of garlic, chili peppers, and Szechuan peppercorn, known also as star anise and mala, in their best known recipes. A lot of their dishes, like Kung Pau chicken, use these hot red chilis.
--Chinese Szechuan Ginger Chicken--
Sauce:
1/2 cup cornstarch
1/4 cup water
1+1/2 tsp. minced garlic
1+1/2 tsp. minced ginger root
3/4 cup sugar
1/2 cup soy sauce
1/4 cup white vinegar
1/4 cup cooking wine
1+1/2 cup hot chicken broth
3 lbs. deboned dark chicken meat, cut into large chunks
1/4 cup soy sauce
1 tsp Szechuan pepper or white pepper
1 egg
1 cup cornstarch
Vegetable oil for deep-frying
2 cups sliced green onions
16 small dried hot peppers
Mix 1/2 cup cornstarch with water. Add garlic, ginger, sugar, 1/2 cup soy sauce, vinegar, wine, chicken broth and MSG (if desired).
Stir until sugar dissolves. Refrigerate until needed.
In a separate bowl, mix chicken, 1/4 cup soy sauce and white pepper.
Stir in egg. Add 1 cup cornstarch and mix until chicken pieces are coated evenly. Add a little vegetable oil to help separate chicken pieces.
Divide chicken into small quantities and deep-fry at 350 degrees until crispy. Drain on paper towels.
Place a small amount of oil in wok and heat until wok is hot. Add onions and peppers and stir-fry briefly. Stir sauce and add to wok. Place chicken in sauce and cook until sauce thickens.
Ginger Chicken can be served with Chinese Dumplings or Chicken Fried Rice. The rice dish can be easily prepared from a supermarket mix.
Dig in and enjoy!

Japanese Ginger Salad Dressing Recipe - Easy to Make!

 By

Most foods taste better when mixed with the proper flavoring or dressing. Be it a main dish or simply, an appetizer, nothing beats a good food with an equally good dressing. An ordinary steak becomes extraordinaire when served with a flavorsome sauce. Fruits like strawberry work better with dips like whipped cream or chocolate.
Salad, one of the more famous combinations of good foods tossed together, never comes without its accompanying dressing since this gives it that added flavor. Whether this is a garden fresh salad or a Caesar delight, this will come as somewhat bare if not served with a dressing. And with the people's fascination with inventing any dressing of their choice, the options are endless. One can opt for the traditional mayo dressing or go adventurous with hummus. Nonetheless, each dressing has its own appeal depending on the preference of the eater. One such favorite dressing is the Japanese ginger salad dressing. The distinct tangy feeling of ginger adds up to its charm. This is especially good for salad containing vegetables which are a bit bland.
So instead of buying the dressing for your salad, just make your own with this Japanese ginger salad dressing recipe. Here are the ingredients:
1 thumb-size ginger
½ cup rice wine vinegar
¼ cup sesame oil
2/3 cup vegetable oil
¼ cup soy sauce
1 tbsp sugar or honey
Directions:
Grate the ginger. Mix the grated ginger with the other ingredients (except for oil) in a bowl. When the ingredients are thoroughly mixed, add both sesame and vegetable oil gradually and mix completely. For a more Japanese taste and experience, add a little sake or Japan's famous wine. This will give the dressing that distinct flavor.
This mixture is good for 4-6 servings. For a party-size serving of salad, just increase the quantity of each ingredient.
